Ingredients for the Bread Roll Dough:
500g all-purpose flour
500g whole wheat flour
510g fresh milk
200g water
1 teaspoon salt
2 tablespoons extra virgin olive oil
10g fresh yeast or 8g dry yeast
For the Topping and Filling:
400g pizza mozzarella (Italian fresh mozzarella is very wet, but pizza mozzarella is drier. You can also use another cheese that doesn't stretch like mozzarella but is still flavorful and easy to find in supermarkets.)
Tomato sauce + a pinch of salt + extra virgin olive oil + oregano

Combine all the ingredients for the bread dough (EXCEPT YEAST; add the yeast last) in a bowl and mix. Knead well for 10 minutes.
Add the yeast and knead for another 5 minutes. The dough will be quite sticky as shown in the video.
Cover the dough and let it rest until it doubles or triples in size.
Punch down the dough.
Roll out the dough to about 5mm thick. Place a mozzarella stick about the width of your finger and the length of the dough. Use a knife or pasta cutter to cut the dough into long strips as shown in the video. Roll up the dough and tuck the edges to prevent it from opening.
Place on a baking sheet lined with parchment paper. Let the dough rest until it rises about 70%. Bake in the oven at the maximum temperature. After 7 minutes, reduce the temperature to 200°C (390°F). Bake until golden brown.
Prepare the brush topping: finely chop garlic and parsley, and mix with olive oil.
When the bread is still warm, brush the garlic oil mixture over the top.
Serve warm so the cheese stays melted and stretchy. If made in advance, reheat the bread in the oven before serving to melt the cheese again. :)
