  • 1 orange, sliced into pieces about 3mm thick
  • 2 tablespoons freshly squeezed orange juice (I used western oranges, Vietnamese green-skinned ones would probably be too sour)
  • 1 teaspoon grated lemon zest
  • 1 teaspoon paprika powder
  • 1 teaspoon oregano
  • Salt (I used a little more than half a teaspoon)

  • Mix everything together
  • Cover and let it marinate overnight
  • Grill the chicken on a cast iron pan with a little oil until cooked through. If you have a charcoal grill, even better!
  • Serve with white rice, or enjoy it Western-style with potatoes and vegetables—both are delicious!
