This rice dish resembles sushi, but it's more like a sandwich. It's convenient for kids to take to school, but usually, I don't include fish in it because it can have a strong odor, and it's not guaranteed to stay fresh for a long time, especially in hot weather at school. This rice dish is just a "copycat" version, not the authentic Japanese Onigirazu, as I don't use Japanese rice. My Japanese friend often makes beautiful bento boxes and sushi. She says she isn't very "Japanese," but her food still turns out great. My daughter often tells me about the bento boxes of D, her daughter. Asia, my kid, often goes to their house for lunch, and she told me D's grandparents make some kind of special sprinkles that goes really well with rice. she even claims it's the best rice dish she's ever had in her life! Oh my goodness! I was born in a rice country, and if she says that, it breaks my heart! 😿 I asked for the secret recipe from D's mom, who told me that her parents grow a type of leaf similar to shiso and dry it, then grind it with salt... I've tried planting shiso from seeds, but for 16 years, it has never sprouted. 😞 I guess I'll have to ask Asia to go to D's house and have lunch there instead! Hahahah! 😆

Seaweed sheets nori
White rice, it's best to use Japanese rice, round and short grains with the right level of stickiness. I use Basmati rice from India, so it's very loose and lacks stickiness.
Carrots peeled and cut into strips.
Lettuce.
Tomatoes sliced.
Smoked salmon.
Freshly cooked hot rice.
Cling film.

Season the rice with a little salt (I skip this step because I prefer it less salty).
Place a piece of cling film on the table.
Put the nori sheet on top.
Add the rice and use a spoon (a silicone spoon will be less sticky and easier to use) to evenly spread the rice on the nori sheet.
Add the filling.
Wrap the nori sheet as shown in the video. By the second one, you'll get the hang of it, and the rice will look beautiful.
Wrap the cling film around it. The cling film helps create a neat package and shape the rice. Once wrapped, press the rice into a square shape.
Then remove the cling film, cut the rice in half, and place it in a bento box or keep it wrapped in cling film to take it to school, similar to a sandwich. (This is Lam Thy Thy's trick; Japanese mothers wouldn't allow their kids to have messy lunch boxes like this! Hahahah!)
