ITALIAN BAKED EGGPLANTS - MELANZANE ALLA PIZZAIOLA

This dish is easy! And absolutely delicious! The soft juicy eggplant goes perfectly with tomato sauce, mozzarella and a little but of parmesan cheese!

Nguyên liệu
  • The eggplant should be large in size like the picture (eggplants in Vietnam are usually elongated and not suitable for this dish).
  • Tomato sauce (passata di pomodoro)
  • Mozzarella, sliced thickly about 5mm or cut into small pieces as desired
  • Oregano
  • Salt
  • Extra virgin olive oil
  • Grated Parmesan cheese
Cách làm
  • Cut the eggplant in half. Cut the surface of the eggplant as shown in the picture and video
  • Sprinkle a little salt, oregano, and cooking oil
  • Grill the eggplant until cooked, around 35 minutes, at 180 degrees Celsius
  • Prepare the tomato sauce: mix tomato sauce with a pinch of salt, oregano, and olive oil
  • Spread the tomato sauce on the surface of the eggplant, place mozzarella on top, and sprinkle some grated Parmesan cheese
  • Bake until the Parmesan cheese melts and the surface of the eggplant turns slightly golden brown
  • Turn off the heat
  • Sprinkle a little fresh oregano for garnish
  • Serve hot with bread
