This cake is so addictive! It is moist, topped with refreshing, rich cream cheese. It's irresistible! My husband slurped 2 slices immediately after coming home and seeing the cake in the fridge! I shouldn't make it too often; otherwise, we would put on weight quickly! I decorate the cake with fondant carrots. Feel free to leave this step if you need more time to prepare. But it is totally worth it, as the decoration is impressive. Children love it! :D

Cake
248g vegetable oil
310g sugar
1 teaspoon salt
4 large eggs
1 tablespoon (7g) cinnamon
1/3 teaspoon grated fresh ginger
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
240g flour
326g grated carrots (I used my spiralizer to save time :) )
170g chopped pecans or walnuts, toasted for best flavor
Frosting
500 gr cream cheese (you can use Philadelphia, Robiola or Mascarpone)
2 - 3 tablepoon yoghurt to reduce the thickness of cheese a bit
2 tablespoon icing sugar (depending on how sweet you prefer, the quantity is subjective in this step)

To make the cake:
Preheat the oven to 180 degree Celsius. Lay baking paper in the cake pan
In a large bowl or the bowl of a stand mixer, beat together the oil, sugar, salt, eggs, spices, baking powder (seived well), and baking soda.
Add the flour, stirring until well blended.
Add the carrots and nuts, and mix until just blended. Pour into the prepared pan(s).
Bake the cake(s) for 35 to 40 minutes, or until a cake tester inserted into the center comes out clean
Allow the cake(s) to cool completely before frosting. If you're using round layer pans, remove the layers from the pans after about 15 minutes, and place them on a rack to cool.
Cut the top of the cake a bit to have an event surface. Then turn the cake upside down, I use the bottom of the cake, as it is more even, and the cake would look nicer after the decoration.
To make the frosting:
Mix all ingredients together.
To decorate:
I put the cake ring back (as in the video clip); this step would help me spread the frosting easier and faster.
Take off the ring, put the fondant carrots on top of the cake.
Refrigerate the cake.
You can put the cake in the freezer in case too much cake! :p I cut my cakes into portions and freeze them. Every morning, we just pull out 1 piece for breakfast (FYI the italians eat sweet for breakfast :) )
