I had three bananas at home that no one was eating. So, I had to step in and make some banana muffins to use them up. In Italy, we usually import bananas from South America. They're similar to the ripe bananas from Vietnam, with a pleasant aroma, but they don't taste as good as our Vietnamese bananas. So, if anyone uses Vietnamese bananas for this, it's going to be heavenly!! :D This muffin is considered a "less harmful to health" treat because it contains a high amount of oat bran. I used wholemeal flour, so it also has a lot of fiber and such. If you don't have wholemeal flour, using white flour is also okay!

Muffin Batter:
113g yogurt
1 large egg
50g room temperature butter
340g to 369g bananas, 2 to 3 large ones, mashed
149g granulated sugar
113g oat bran
180g flour
1/2 teaspoon baking powder
Vanilla essence
Topping:
53g brown sugar
23g oats
14g flour
1/4 teaspoon cinnamon powder
1 tablespoon (14g) melted butter
Cách làm
Put the muffin batter mixture into a bowl. Beat until smooth.
Put the mixture into a piping bag. Pipe the mixture into the muffin tin.
Mix the topping mixture until it clumps together.
Use a spoon to put the topping on the muffins.
Preheat the oven to 190°C.
Put the muffins in and bake for about 20 minutes, until they're dry to the touch.
