- Cold rice - cooked rice and left in the fridge overnight (I use a rice and quinoa mix) - Finely chopped onions - Minced garlic - Carrots, cut into small cubes - Peas - Shrimp, cut into bite-sized pieces - Salt - Curry powder - Pre-fried eggs

Next, add the diced carrots to the pan and sauté for about 5 minutes. This will soften the carrots and allow them to absorb the flavors of the onions and garlic.
3. Now, take your cold rice (or rice and quinoa mix) and break it up to separate the grains. Add this to the pan and stir everything together. 4. Add the peas/greenbeans to the pan and stir them in.
5. Season the mixture with salt and curry powder. This will give our dish its distinctive flavor. 6. Let everything cook together for about 15 minutes. This will allow the rice to become firm and absorb all the wonderful flavors. 7. Now, add the shrimp and pre-fried eggs to the pan. 8. Continue to sauté until the shrimp are just cooked through.
