Fried rice is a common dish in Vietnam. Nowadays we have too many fancy fried rice. But originally, it is a "sustainable dish - speaking as a trend in our current time :p) as it is made by the leftover rice. And that's the reason why, "cold rice" works best with fried rice, not hot cooked rice!
With this recipe, I made a vegetarian version, using all the vegetable i had in hand, including: onion, carot, frozen peas, and zucchini. I also added eggs to complete the dish with some protein.
