GREEK-STYLE CHICKEN SKEWERS

I like this dish for two reasons: 1) it’s high in protein and low in oil, and 2) it’s incredibly delicious despite being simple to prepare, without requiring a hundred different spices or complicated techniques. This cooking style is extremely common in the Mediterranean region (including Italy, Greece, Spain, and Portugal), where people prepare meals quickly and simply, yet the results are remarkably flavorful. At first, I wasn’t entirely convinced, but after living here for many years and learning their cooking methods, I’ve come to find it truly amazing. The creamy, elaborate dishes often thought of as "Italian" are, in fact, mostly improvised interpretations. Italians in Italy don’t usually eat that way. 😅

Greek-style chicken skewers, or "souvlaki," are a flavorful and aromatic dish that captures the essence of Mediterranean cuisine. Tender chunks of chicken are marinated in a blend of olive oil, lemon juice, garlic, oregano, and a touch of paprika, infusing the meat with vibrant and zesty flavors. The marinated chicken is then threaded onto skewers and grilled to perfection, achieving a smoky, slightly charred exterior while remaining juicy inside. These skewers are often served with warm pita bread, creamy tzatziki sauce, and a side of fresh vegetables like tomatoes, cucumbers, and red onions. Light, healthy, and bursting with flavor, Greek-style chicken skewers make an ideal meal for gatherings, barbecues, or a quick and satisfying dinner.

It has a bold, slightly peppery flavor with earthy and floral undertones, making it an excellent seasoning for meats, vegetables, and sauces. Oregano is rich in antioxidants and contains compounds like thymol and carvacrol, which may have antimicrobial properties. Fresh or dried, oregano enhances the flavor of dishes, especially when paired with olive oil and garlic. It is often sprinkled over pizza, pasta, and grilled meats, offering a distinctive aroma and taste that complements various recipes.

4: Extra virgin olive oil: Extra virgin olive oil is a high-quality oil made from the first cold pressing of olives, known for its robust flavor and health benefits. It is rich in monounsaturated fats and antioxidants like polyphenols, which may support heart health and reduce inflammation. Extra virgin olive oil has a fruity, slightly peppery taste and is widely used in cooking, dressing salads, and as a dip for bread. It enhances the flavor of dishes and serves as a base for marinades, making it a staple in Mediterranean cuisine. Its versatility and nutritional profile make it a popular choice for health-conscious cooking.

Weightwatchers (Opt for losing weight):
To make Greek-Style Chicken Skewers more weight-loss-friendly, use skinless chicken breast to reduce fat and calories. Opt for fresh oregano leaves if available, as they add more flavor without extra calories; if dried oregano is used, use it sparingly. Substitute paprika powder with a smaller amount of ground cumin for a similar smoky flavor with fewer calories. Use extra virgin olive oil in moderation to keep fat content low, or opt for cooking spray to reduce oil usage. Thread the chicken pieces onto skewers with vegetables like bell peppers or zucchini to add volume and nutrients without increasing calories, creating a satisfying and balanced dish.

  • Oregano leaves (I use fresh ones which are incredibly fragrant; if unavailable, dried leaves can be used)
  • Paprika powder
  • Salt
  • Extra virgin olive oil

Cách làm
  • Mix all the seasonings together, coat the chicken thoroughly, cover, and let it marinate for about 30 minutes or, ideally, overnight.
  • For those without much experience in seasoning, start with a small amount of salt. Cut a piece of chicken, cook it in a pan, and taste to ensure the flavor is right. This method guarantees a delicious dish without errors.
  • Skewer the meat and grill it over charcoal or on a cast iron skillet.
  • I paired this dish with brown rice and stir-fried broccoli. Perfectly healthy!

Ghi chú
For those who are busy or just too lazy to cook: you can place the skewers into a plastic bag as shown in the image and store them in the freezer. Just thaw them out when needed and cook to enjoy a quick and delicious meal!
