It was kinda strange for me to hear the fact of potatoes vs sweet potatoes at the first time, practically, sweet potatoes are much healthier than the white ones. because when potatoes enter our body, insulin is almost immediately produced and transforms "sugar" into fat; this process happens much later with sweet potatoes, hence diabetic patients'd better consume sweet potatoes than white potatoes? :)
This recipe is very simple, aspecially if you have canned artichokes at hand.
