Hainanese chicken rice is a classic and beloved dish originating from Hainan, China, and is widely enjoyed across Southeast Asia, particularly in Singapore and Malaysia. This dish features tender, poached chicken served with fragrant rice cooked in chicken broth, garlic, and ginger, giving the rice a rich and savory flavor. The chicken is typically served with a trio of dipping sauces: a tangy chili sauce, a ginger-garlic paste, and a dark soy sauce, which complement the delicate flavors of the chicken and rice. Often accompanied by a light, clear soup and garnished with fresh cucumber slices, this dish is both comforting and flavorful. Hainanese chicken rice is celebrated for its simplicity and the perfect harmony between the juicy chicken and aromatic rice, making it a satisfying and wholesome meal.

Use less glutinous rice or replace it with brown rice to increase fiber and reduce the glycemic index. Limit or omit sugar and reduce the amount of fish sauce to lower sodium intake. Minimize the use of fried shallots and roasted peanuts, as both are calorie-dense; a small amount can still add flavor and texture. Load up on (Add more) fresh cucumber, cilantro, and lime juice for low-calorie, nutrient-rich enhancements that keep the dish light and refreshing.

  • Chicken thigh
  • Onion
  • Cucumber
  • Salt
  • Turmeric powder
  • Fish sauce
  • Chili
  • Sugar
  • Lime juice
  • Cilantro (use whatever you have): Vietnamese coriander OR spearmint, basil
  • Glutinous rice (ST25 type or regular rice mixed with sticky rice at a 50%-50% ratio)
  • Fried shallots
  • Roasted peanuts (if you like adding peanuts)
Cách làm
  •  Put the chicken in a pot, add enough water to cover it, and add a cross-cut onion, salt, pepper, and turmeric powder.
  • Boil for about 25 to 30 minutes (from the time the water starts boiling). Use chopsticks to poke the meat; if the juice that comes out is clear, the meat is done. For the best flavor, only boil until just cooked.
  • Set the chicken aside, and when it cools down, shred it into bite-sized pieces.
  • Use the chicken broth to cook the rice.
  • While waiting for the rice to cook, slice the onion, rinse it twice to reduce the strong smell, and soak it in a large bowl of ice water to keep it crisp.
  • Slice the cucumber thinly.
  • Add the shredded chicken, cucumber, and drained onion to a large bowl. Add fish sauce, minced chili, sugar, and lime juice. I usually use the ratio of 1 tablespoon of fish sauce to 2 to 2.5 tablespoons of sugar (yes, a lot of sugar in the fish sauce! No joke!). Season to taste. Mix well. Top with cilantro.
  • Serve the rice on a plate and place the chicken salad on top.
  • That’s it! Delicious, absolutely amazing!
