It’s typically served with steamed rice, making it a hearty and comforting meal that captures the essence of Cambodian home cooking.

Do you know:
1. Minced pork: Minced pork is a versatile ingredient that provides a rich, savory flavor and is an excellent source of high-quality protein, essential for muscle repair and growth. It also contains important vitamins and minerals, including B vitamins like niacin and vitamin B12, which are crucial for energy metabolism and red blood cell formation. Minced pork is often used in a variety of dishes, from stir-fries to dumplings, where its fat content helps keep the meat tender and flavorful.

2. Eggplant: Eggplant, or aubergine, is a nutrient-rich vegetable known for its spongy texture that absorbs flavors well. It is low in calories and high in dietary fiber, which supports digestive health. Eggplant also contains antioxidants like nasunin, which protects cells from oxidative stress, and essential vitamins like vitamin C and vitamin K. Its versatility makes it a popular choice in dishes such as stews, curries, and grilled preparations, where it adds a mild, earthy flavor.

3. Cilantro: Cilantro, also known as coriander leaves, is a fresh herb with a distinct, citrusy flavor that brightens up dishes. It is rich in vitamins A, C, and K, which are important for immune function, skin health, and blood clotting. Cilantro also contains antioxidants and has been shown to have anti-inflammatory properties. It is often used as a garnish or mixed into salads, salsas, and various cooked dishes to add a burst of freshness.

4. Fish sauce: Fish sauce is a staple in Southeast Asian cuisines, made by fermenting fish with salt. It has a deep, savory flavor that enhances the taste of various dishes, adding a rich umami profile. Low in calories, fish sauce provides essential nutrients like amino acids, calcium, and iodine, supporting muscle health, bone strength, and thyroid function. It’s versatile, often used in marinades, dressings, dipping sauces, and as a seasoning in soups and stir-fries. Fish sauce intensifies flavors, making it an essential ingredient in many traditional recipes, blending seamlessly with other ingredients for a balanced taste.

Weightwatchers (Opt for losing weight):
To make the Khmer dish of Minced Pork Stir-Fried with Eggplant more weight-loss-friendly, use lean minced pork to reduce fat content while still enjoying protein. Opt for less sugar or omit it altogether to cut down on added sugars. Minimize the use of fish sauce to lower sodium intake, and use it sparingly for flavor. Consider using a non-stick pan or a small amount of oil to cook the finely chopped purple onion, garlic, and eggplant.
