These small pizza are a common snack for children or a must-have in any birthday parties with finger food. making it is easy, ai wouldn't say fast, due to the leavening time, but it is not difficult and complicated. The result can satisfy anyone, from elders to children. 😎 

Do you know:
1. Yeast: Yeast is a living microorganism used in baking and fermentation processes, most commonly to leaven dough by converting sugars into carbon dioxide and alcohol. This gas creates bubbles, causing the dough to rise and giving baked goods a light, airy texture. Yeast is also a source of B vitamins, particularly B12, and has some protein content. In addition to its essential role in bread-making, yeast is used in brewing beer and fermenting wine. Its distinct ability to enhance both texture and flavor makes it indispensable in the production of pizza dough, breads, and pastries.

2. Tomato sauce: Tomato sauce is a smooth, rich condiment made from cooked tomatoes, often seasoned with garlic, herbs, and spices. It serves as a base for many dishes, including pasta, pizzas, and stews, and adds both flavor and moisture. Tomatoes are rich in vitamins A and C, supporting immune health and skin vitality, and contain lycopene, an antioxidant that helps reduce inflammation and protects cells from damage. Tomato sauce is versatile and can be adjusted with additional ingredients to suit savory dishes, offering a balance of acidity and sweetness that enhances a wide range of recipes.

3. Pizza mozzarella: Pizza mozzarella is a soft, stretchy cheese made from cow’s milk, known for its mild flavor and excellent melting properties. It is commonly used as a topping for pizzas and other baked dishes due to its ability to melt into a creamy, gooey texture when heated. Pizza mozzarella is a good source of calcium and protein, which support bone health and muscle function. Its relatively neutral flavor allows it to pair well with a variety of ingredients, enhancing the taste and texture of dishes while providing richness and moisture. Mozzarella is a key component of traditional pizzas.

Weightwatchers (Opt for losing weight):
To make Mini Pizza (Pizzette) more weight-loss-friendly, use whole-wheat flour instead of regular flour to boost fiber and lower the glycemic index. Opt for low-fat or plant-based milk to cut calories, and use minimal cooking oil or an olive oil spray to reduce fat. For the cheese, limit the amount of pizza mozzarella or choose a lower-fat cheese to keep the dish lighter. Use a small amount of tomato sauce to reduce excess sodium, ensuring it’s a simple passata without added sugar. These tweaks help maintain the flavor and texture of pizzette while making them a healthier option.

  • 500 grams of flour
  • 200 grams of fresh milk
  • 100-130 grams of filtered water (do not replace water with 100% milk, as it will make the dough sticky and less delicious)
  • A pinch of salt
  • A little cooking oil
  • 7 grams of dry yeast or 12-15 grams of fresh yeast
  • Tomato sauce (passata di pomodoro), not ketchup!
  • Pizza mozzarella, not regular mozzarella (the one with liquid in the package). Pizza mozzarella doesn't contain liquid inside, and it's specifically made for pizza. If you can't find it, you can use other types of soft cheese.

  • Mix flour, fresh milk, salt, cooking oil, and yeast together. Then gradually add water. 
  • Knead until the dough comes together and no longer sticks to the bowl. If the dough is too sticky, add more flour. If it's too dry, add more water.
  • Cover the dough and let it rest for about 2 hours or until it doubles in size (about 2.5 - 3 times the original size).
  • Prepare the tomato sauce: mix tomato sauce, salt, cooking oil, oregano, and a little sugar if desired (as tomato sauce tends to be slightly acidic).
  • Flatten the dough.
  • Shape the dough into small round balls about the size of your palm. Press gently to slightly flatten them and place them on a baking tray lined with parchment paper.
  • Let the dough rest for 30 minutes.
  • Use your hands press the center of the ball, making it into small pizza, leave the border (like in the picture)

  • Add the toppings. Since I made this pizza for my vegetarian daughter, I only used olive oil or sautéed mushrooms as toppings. Others can add sausage or other toppings if desired.
  • I don't add mozzarella cheese to the pizza right away because my oven doesn't heat evenly. If I put mozzarella on top like they do in pizzerias, it would dry out or burn on the edges by the time the pizza is fully cooked. Mozzarella for pizza should be soft and melty. So, I only add the mozzarella after the pizza is almost fully cooked.
  • Preheat the oven to 200 degrees Celsius. Place the pizza in the oven and bake for about 15 minutes. Then, place slices of mozzarella on top of the pizza. When the bottom of the pizza turns slightly golden and the mozzarella has just melted, turn off the heat. Let it cool slightly and serve. This pizza can be enjoyed hot or at room temperature. In Italy, it is typically eaten at room temperature because they make it in the morning and sell it until noon or in the afternoon.
  • You can cover the pizza with a cloth to prevent it from drying out.
  • If I bake the pizza at 2 PM and the party is at 5 PM, I cover the pizza again and remove the cover when it's time to serve at the party.
  • If you have leftover pizza, you can store it overnight and reheat it in the oven the next day. It will still taste delicious! :)
