Shrimp cake is a delightful seafood dish that features fresh shrimp as the star ingredient, delivering a burst of flavor in every bite. Typically made by blending minced shrimp with seasonings, herbs, and sometimes vegetables, the mixture is formed into patties or cakes. These cakes are then pan-fried or deep-fried until golden brown and crispy on the outside while remaining juicy and tender inside. The shrimp's natural sweetness is complemented by ingredients like garlic, ginger, and cilantro, adding depth to the flavor profile. Often served with a tangy dipping sauce, shrimp cakes make for an excellent appetizer or main course. They are versatile enough to be enjoyed in various cuisines, showcasing the deliciousness of seafood in a fun and satisfying way.

Their ability to absorb flavors makes shrimp a versatile ingredient in both casual and gourmet dishes.

3. Dipping sauce: The dipping sauce combines the savory, tangy, and slightly sweet flavors, making it a perfect accompaniment for various dishes, especially shrimp. Good fish sauce provides a rich umami depth, while lime juice adds brightness and acidity. Sugar balances the saltiness of the fish sauce, and water helps to achieve the desired consistency. Garlic and fresh chili contribute pungency and heat, enhancing the overall flavor profile. This sauce is adaptable; users can adjust the ingredients to suit their taste preferences, making it a versatile dipping option for appetizers and main courses alike.

Weightwatchers (Opt for losing weight):
To make Shrimp Cake more weight-loss-friendly, use less all-purpose flour and substitute some with whole wheat or chickpea flour for added fiber. Consider reducing the amount of sweet potato or using a smaller portion, as it can add calories. Opt for a leaner shrimp variety or limit the number used to reduce calorie density. When frying, use minimal peanut oil or switch to a healthier oil like avocado oil, and consider baking or air frying instead of deep frying for a lighter option. For the dipping sauce, reduce the sugar or substitute it with a natural sweetener and use a low-sodium fish sauce to cut down on sodium while still enjoying the dish's flavor. Fresh herbs, lettuce, and mint add flavor and nutrients without extra calories, keeping the meal light and satisfying.

  • 1 large red-skinned sweet potato
  • Around 15-20 large shrimp
  • 3/4 cup all-purpose flour
  • 1/2 cup rice flour
  • 1/4 teaspoon salt
  • A pinch of turmeric powder
  • 3/4 cup water + 1 tablespoon water
  • A large basket of lettuce, mint, and herbs ;D
  • 1/4 teaspoon slaked lime paste (white) *This is lime paste, available in the US or at Thai stores, but I couldn’t find it in Italy and didn’t really need it much! So I use bicarbonate (baking soda) instead. It's not exactly the same, but for this recipe, there’s no significant difference! Bicarbonate (baking soda) is easy to find ;) Plus, baking soda is a “miracle” in the kitchen: it’s used in baking, washing vegetables (kills bacteria), cleaning pans to a shine, cleaning, laundry, etc. One day, I’ll share the wonderful uses of baking soda ;) Bottom line, buying baking soda means you can use it continuously, always handy, whereas buying the other stuff means you’d use a pinch and waste the rest of the box! ;D
  • Peanut oil for frying (best for deep frying)

Dipping sauce:
  • 1 tablespoon good fish sauce
  • Juice of half a lime
  • 1 tablespoon sugar
  • 3 tablespoons water
  • 1 large garlic clove
  • Fresh chili
--> Pound the garlic and chili together, add the remaining sauce ingredients, and adjust to taste. For me, there’s no perfect dipping sauce recipe; I usually teach friends this basic method, and they adjust it to their own taste ;)
Cách làm
  • Peel the sweet potato and cut it into julienne slices (in the picture, I cut the potato too large, so cut it half the width of what I did). The ideal size is the width of a rice noodle strand and the length of a pinky finger ;D I cut mine a bit too thick due to lack of experience!
  • Wash the fresh shrimp and let them dry; it's best to keep the shells on for a crispier and more flavorful result.
  • Soak the sweet potato slices in water with slaked lime paste or bicarbonate for 30 minutes. Rinse and dry completely. I used a towel to pat them dry.
  • Mix the all-purpose flour, rice flour, salt, and turmeric powder together.

  • Prepare a pan with enough oil for deep frying.
  • Coat the dry sweet potato slices in the batter (do it in batches; I fried three small, palm-sized cakes at a time ;D).
  • Place the batter-coated sweet potatoes in the hot oil, and immediately place a shrimp on top. Use a spoon to press the shrimp into the batter to make it stick. I was worried the shrimp wouldn’t stick, so I put a little batter on top of it, which helped but didn’t look as good as having a big shrimp visible on top of the cake. Oh well, first attempt! It’ll be prettier next time ;D
  • Fry over medium heat, flipping to cook both sides evenly until golden brown.
  • Remove and place on paper towels to absorb excess oil. Serve hot with dipping sauce and herbs.
  • You can prepare these in advance. To reheat, place them on a grill and warm them up in the oven at 180°C for 5-7 minutes, or until they are crispy and hot.
