VEGETARIAN BROKEN RICE WITH EGG PATTY

This is a vegetarian version of a very famous dish in the South of Vietnam, called cơm tấm chả trứng - broken rice with steamed eggs, pork, and black mushrooms. To substitute pork, I mockmeated firm tofu, added some taro to add some moisture, and imitated the pork fat. The result is impressive. I think even a carnivore would fall in love with this dish! 
Why broken rice? The broken rice is those that are broken during the hand cleaning rice from its cust. (in the past I guess). I remember I used to have this food for breakfast when little from a streetstall near my house. The cook was a girl 3 years older than me (so she started cooking and helping her sell food when she was like 11). 
Back to my dish, cơm tấm is an elaborated dish! beside the steam egg, we also have to prepared the picked carot, dipping sauce, spring onion, tomatoes, and cucumber. I think I make this dish once a year :). But often, like this time, I have made a huge batch and keep it in portions in the freezer. :)

Ingredients for the vegan egg patty:
  • Firm tofu, crumbled
  • Dried wood ear mushrooms, soaked and finely chopped
  • Mung bean vermicelli, cut into small pieces (I kept it dry without soaking in water to help the patty hold its shape, with less water)
  • Finely chopped taro
  • Finely chopped onions and garlic
  • Salted eggs (I used pre-cooked salted eggs for convenience, but fresh salted eggs can be used as well)
  • Chicken or duck eggs 
Garnish:
  • Egg yolks 

Pickled Vegetables:
  • Carrots, julienned
  • For every 1 tablespoon of sugar, use 1 tablespoon of vinegar (adjust the amount of sugar and vinegar based on the quantity of carrots)
  • Mix all the ingredients together and let it marinate for at least 30 minutes.


Ingredients for the broken rice dish:
  • Freshly cooked broken rice
  • Scallion oil (I forgot, so I added crispy fat in the scallion oil, you can skip this if you're vegetarian)
  • Sliced tomatoes
  • Sliced cucumbers


Fish sauce dressing:
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • Finely chopped fresh chili peppers
  • 1 teaspoon soy sauce (for color)
  • Juice from half a lime
  • Mix all the ingredients together and adjust the taste until it's to your liking.
Cách làm
  • Sauté the minced onions and garlic until fragrant. Add the crumbled tofu and season with salt and sugar. This method is used to create a "meat-like" texture for the tofu.
  • Add the crumbled tofu and the remaining ingredients for the vegan egg patty. Mix everything together until well combined.
  • Steam the mixture until cooked thoroughly. Be careful to cover the bowl tightly to prevent water from dripping onto the patty, as it may make it soggy.
  • Once the patty is cooked, insert a toothpick into it. If the toothpick comes out clean and the liquid from the patty has a slightly yellowish color, it means it's cooked.
  • Brush the egg yolks on the surface of the patty and steam for an additional 2 minutes.
  • Allow the patty to cool completely before cutting it.
  • Place the patty on top of the rice and garnish with scallion oil, carrots, cucumbers, and tomatoes. Serve with fish sauce dressing.
