This is a vegetarian version of a very famous dish in the South of Vietnam, called cơm tấm chả trứng - broken rice with steamed eggs, pork, and black mushrooms. To substitute pork, I mockmeated firm tofu, added some taro to add some moisture, and imitated the pork fat. The result is impressive. I think even a carnivore would fall in love with this dish!
Why broken rice? The broken rice is those that are broken during the hand cleaning rice from its cust. (in the past I guess). I remember I used to have this food for breakfast when little from a streetstall near my house. The cook was a girl 3 years older than me (so she started cooking and helping her sell food when she was like 11).
Back to my dish, cơm tấm is an elaborated dish! beside the steam egg, we also have to prepared the picked carot, dipping sauce, spring onion, tomatoes, and cucumber. I think I make this dish once a year :). But often, like this time, I have made a huge batch and keep it in portions in the freezer. :)
