(Ingredients for 2 servings)
  • 160g Tagliolini pasta
  • Finferle mushrooms or any preferred type (leave whole if small; if using larger mushrooms, cut into bite-sized pieces).
  • 3 cloves of garlic, crushed
  • Butter
  • Chopped parsley
  • 18g flour
  • 200g fresh milk
Cách làm
  • MUSHROOM SHOULD NOT BE WASHED (this applies to all types of mushrooms). If the mushrooms are clean and free of dirt, there's no need to wash them. If they have some dirt, wash them very quickly, as mushrooms easily absorb water. The more you wash them, the soggier your dish will be.
  • Bring a pot of water to a boil. Once boiling, add salt and cook the pasta according to the time indicated on the package.
  • Sauté the garlic with butter until fragrant.
  • Add the mushrooms and sauté until cooked. The mushrooms will release water; cook over high heat to let the water evaporate.
  • Mix the flour with the milk.
  • Pour the milk mixture into the mushrooms. Cook for 1 minute until the sauce thickens, then turn off the heat.
  • Toss the pasta with the mushroom sauce. Note that: PASTA SHOULD NOT BE RINSED IN COLD WATER like it often is in Vietnam. Once the pasta is hot and drained, immediately mix it with the sauce.
  • Top with chopped parsley and Parmesan cheese.
  • Serve hot.
