TORN-APART BREAD ROLL WITH BUTTER

I would say this bread is semi deep fried, due to the layers of butter making the bread cooked with butter in the oven, the texture is more chewy and a bit of butter-like crispy. Thanks to this process, the bread doesn't get old and dull like a normal ones, instead, the "freshness" is conserved quite well. 
Layers of bread is formed, making it very enjoyable. I love tearing bread layers!

Bread Ingredients:
  • 700 grams of flour
  • 410 grams of water
  • 7 grams of dry yeast
  • A pinch of salt
  • 50 grams of vegetable oil

Glazing Ingredients:
  • 50ml of unsweetened fresh milk
  • 1/2 tablespoon of brown sugar
  • 50 grams of refrigerated / cold butter 
Cách làm

  • Mix all the bread ingredients (excluding the yeast) together, knead for 15 minutes until smooth and elastic.
  • Add the yeast, then continue kneading for an additional 5-7 minutes.
  • Cover the dough and let it rest for 2 hours or until it doubles in size.
  • Punch down the dough and roll it into a rectangular shape, about 5mm thick.
  • Cut the refrigerated butter into 2-3mm thick slices. Place the butter slices on the dough. I wouldn't cover all of the dough serface, but leaving some spaces is ok, else, the bread would be packed of butter :D
  • Roll up the dough.
  • Use a knife to cut the long dough roll into round pieces, about 3cm thick.
  • Place the bread on a baking tray lined with parchment paper.
  • Prepare the fresh milk and brown sugar for glazing.
  • Use a brush to apply the milk mixture on the surface of the bread for a nice color after baking.
  • Let the bread rest for about 40 minutes or until it has expanded by approximately 70% (not doubled in size).
  • Preheat the oven to 220 degrees Celsius and place the bread inside. After 10 minutes, reduce the temperature to 180 degrees Celsius. Bake for an additional 5 minutes and check if the bread has turned golden brown.
  • Turn off the oven and remove the bread to cool.
  • If you make a large quantity of this bread, you can store it in the freezer. When needed, thaw it and it will still be delicious, fragrant, and buttery. Enjoy tearing apart the layers of bread. :D
