This is my 3rd time making this cake. It is so yummy that I was scared to make it often (I would put on weight in a blink! 🙃). This cake is made for my in-law bday. He is a massive fan of chocolate. What is more perfect than a moist, chocolaty mud cake?

Cake ingredient:
227g unsalted butter, cold
28g cocoa powder
227g water, hot
240g all-purposed flour
300g granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon instant coffee powder (I used decaffein as my daughter is still small for coffee)
113g sour cream / full cream yogurt, at room temperature
2 large eggs, at room temperature
1 teaspoon vanilla
Topping ingredient:
Around 300 gr of milk chocolate
3 tablespoon of heavy cream / whipping cream
1 handful of hazelnuts

Cake preparation:
Turn on the oven with 180 degree Celsius
Melt the butter, then stir in the cocoa and hot water.
In a separate bowl, combine the flour, sugar, soda, salt, and espresso powder. Pour the cocoa mixture over the dry ingredients, stirring to blend; the mixture will be a bit lumpy.
Add the sour cream, eggs, and vanilla, beating until nearly smooth; a few small lumps may remain.
Pour the batter into the pan. Bake for 30 to 45 minutes or until a tester inserted in the center comes clean. Remove the cake from the oven.
Remove the cake from the oven and wait one minute. Spoon on the marshmallow, wait another 2 minutes, then gently spread the marshmallow over the surface of the cake. Allow to cool to lukewarm, about an hour
For topping:
Pour cream into milk chocolate, and melt it in the microwave with 600W for around 1 minute or till the chocolate melts.
Stir well and add hazelnuts
Assemble:
Pour the topping on top of the cake, and spread the topping all over the surface.
