If you buy puff pastry from the supermarket, make sure to get two sheets to layer on top of each other. This ensures the pastry rises properly and becomes thick with many layers, as supermarket puff is often thin and doesn’t puff up as much as bakery-made ones. I always use two sheets, and while the result might make people wonder, "Did you buy this from a bakery?" the answer is no! Preheat the oven to 180°C.
Beat the eggs with salt, pepper, and Parmesan cheese. Keep in mind that Parmesan is slightly salty, so use minimal salt to taste. For accuracy, you can fry a small spoonful on a pan and taste to check if the seasoning is balanced.
Line a baking tray with parchment paper.
Place the puff pastry on the tray and prick it with a fork to prevent the base from puffing up during baking.
Spread the sautéed vegetables evenly over the pastry.
Tear the cheese slices into small pieces and mix them in with the vegetables (do not place the cheese on top; blend it with the vegetables).
Pour the egg mixture over the pastry, using a spoon to gently adjust the vegetables so the eggs spread evenly across the base.
Bake in the oven until the pastry is golden and crispy.
Remove from the oven and let it cool.
This dish is best served at room temperature and should not be reheated.
Avoid covering the quiche, as the puff pastry may lose its crispiness.
