THAI FRIED RICE WITH MACKEREL, TOMOTOES AND BASIL

I had this dish on an island in Thailand and fell in love with it in an instant! It was so fresh, packed with flavor from the fresh mackerel and juicy tomato, and super fragrant from Thai Basil. As a Vietnamese, fried rice is not a new thing; we have many dishes, too. But not with this combination!

  • Cubes of Mackerel without spines. Marinated with some salt for 15 mins. 
It is old cooked rice; it is best to keep the rice overnight in the fridge. How to cook a perfect steamed rice is here. 
  • Tomatoes cut into cubes 
  • 1 handful of thai basil leaves, roughly chopped
  • Salt 
  • Bird eye chilly 
  • 2 tablespoons chopped onion 
  • 1/2 tablespoon of chopped garlic 
Cách làm
  • Sautee onion and garlic with cooking oil. 
  • Add fish, cook in 3 mins 
  • Add rice, use your hand to press the old rice to make them separate and fluffy 
  • Stir fry in 5 mins. 
  • Season with some salt and 1/2 teaspoon of sugar, yes, sugar! 
  • Cook for another 5 mins, stit well. 
  • Add tomatoes, stir in 1 mins. 
  • Add basil. 
  • Turn off heat. 
  • Add some chilly if you prefer real Thai style! :p
