I had this dish on an island in Thailand and fell in love with it in an instant! It was so fresh, packed with flavor from the fresh mackerel and juicy tomato, and super fragrant from Thai Basil. As a Vietnamese, fried rice is not a new thing; we have many dishes, too. But not with this combination! Enjoy the dish!
