HOW TO COOK A PERFECT WHITE RICE IN VIETNAMESE, CHINESE OR JAPANESE STYLE?

This is the question of all of my international friends! Actually, it is true, that rice the is basic of basic stable in Vietnam. It is so basic that it would be considered strange if someone say they dont have a rice cooker in Vietnam. However, I am Vietnamese, but I dont have my rice cooker, because I can cook rice in a traditional way with a pot and a cooker. :) 
I have taught my italian husband, my in-law and my British friend to cook the Vietnamese white rice successfully. It is easy! I promise!

  • 160 gr asian rice (It is best to have Vietnamese, Laos, Cambodian , Thailand or Vietnam, because these are the rice that you find in our traditional meals and in fried rice of Chinese restaurant. In Italy, the 2 most common are Thaibonnet and Jasmine from Thailand. Sushi rice or Japanese rice is a different type - i find it very similar to Italian risotto rice with short and round grains. 
  • 248 gr water (depending on the rice type, water can be different. The best method is try to cook it 2, 3 times to decide the right proportion, this is the ratio of Thaibonnet - a common Asian rice.

  • Poor water into the rice in a pot

  • Cover it, and cook in medium-low heat till it starts boiling. 
  • Uncover the lid and turn the heat at the minimum, wait till the water vapour away and you can see the grain which was covered by the water. 
  • Cover the pot with the lid. Keep the heat at the minimum for another 5 mins. 
  • DO NOT open the lid, turn off heat. Let it sit for another 7 - 10 mins. 
  • Use a pair of chopstick or a fork to poke the rice. This is a good tip to have fluffy, saparate rice! :)
