You might have heard about Phở, Bún Bò Huế, Bún Thịt Nướng, Nem Rán, and Bánh Mì, but those are not our daily meals. Especially when I was small (like 20 years ago), except for bánh mì, we had the other dishes only a few times a year, when we had special occasions, such as Tết holiday, birthday, or death anniversary of our grannies, etc. So, today, I would like to introduce a simple and healthy dish that is a true home food of any Vietnamese family - Green, consome with spare rips and ginger. To be honest, spare rips are a premium touch; in theory, we have only green and ginger. If you ask me which diet is the best for my health, I would say the old-style and home food in Vietnam. Nowadays, dispensable income is high, and people might indulge more in excessive meat or seafood. But in the past, we didn't eat that many animals. We were more plant-based!

Boil spare rips with onion in high heat till rolling boils. Strain the foam away, and slow the heat till spare ribs are tender.
Clean greens and chop them into small pieces, around 4 cm long.
Cut 3, to 4 slices of ginger
Some salt

Bring the consome with spare ribs to a rolling boil.
Add green and ginger.
Cook in maximum high heat for 2 mins.
Turn off the heat; this is the secret to having a beautiful green veggie!
