Making bagel is an enjoyable experience, different from regular bread; after leaving and shaping, the bread must be blanched (slightly boiled) to form a unique, chewy skin compared to the other bread. 
The process reminds me of Taralli (a biscuit-like finger bread of South Italy (Puglia) or pretzel - the "national bread" of Germany.

Ingredients for the bread:
  • 700g of flour
  • 410g of water
  • 7g of dry yeast for bread
  • Pinch of salt
  • 50g of vegetable oil


For the bread topping:
  • 50ml of unsweetened whole milk
  • 1/2 tablespoon of brown sugar
  • Sesame seeds for sprinkling on the bread surface.

  • Mix all the bread ingredients (excluding the yeast) together, knead for 15 minutes until you get a elastic dough.

  • Add the yeast and continue kneading for another 5-7 minutes.
  • Cover the dough and let it rest for 2 hours or until it has doubled in size.
  • Deflate the dough and divide it into balls of approximately 60g each.
  • Press your finger into the center of each ball and stretch the dough to form a round bagel shape (you can see in the video how to create this amazing shape!).
  • Place the bagels on a non-stick baking sheet.
  • Aggiungere il lievito e continuare ad impastare per altri 5-7 minuti.
  • Coprire l'impasto e lasciarlo riposare per 2 ore o fino a quando si sarà raddoppiato di volume.
  • Sgonfiare l'impasto e dividerlo in palline di circa 60 gr ciascuna.
  • Premere il dito al centro di ogni pallina e allungare l'impasto per formare un bagel rotondo (puoi vedere nel video come creare questa forma sorprendente!).
  • Posizionare i bagel sulla carta da forno antiaderente.
  • When the water is boiling, gently dip the bagels in the boiling water. The bottom part of the bagel will come into direct contact with the boiling water. Using a slotted spoon, press the bagel gently into the water for a moment and then lift it out delicately using a piece of parchment paper, as shown in the video.
  • Boil the bagels in the water for 1 minute.
  • Remove them from the water and place them on a baking sheet.
  • Brush the surface of the bagels with milk.
  • Sprinkle sesame seeds on top (if you want a generous amount of seeds, place the bagels directly on a plate of sesame seeds and then transfer them to the baking sheet).
  • Preheat the oven to 220°C and bake the bagels for 10 minutes, then reduce the temperature to 180°C. Bake for another 5 minutes and check if the bagels have turned golden.
  • Turn off the oven and let them cool.

  • Bagels can be filled with meat, vegetables, and cheese.
  • Thanks to the boiling before baking, the bagel will have a slightly crispy and sturdy outer texture, different from the soft crumb of traditional bread. :)
