Donuts, Krapfen, and Bomboloni are all variations of the same delicious concept—fried dough with a sweet filling. These treats have different names and slight variations depending on the country. Donuts are widely popular in the U.S., Krapfen are a staple in Austria and Germany, and Bomboloni are beloved in Italy. Each culture has its own twist on the recipe, but they all share a love for this sweet, indulgent pastry.
While jam and cream fillings have been traditional, chocolate-filled versions have become increasingly popular in recent decades. The combination of the rich, smooth chocolate with the light, fluffy dough creates an irresistible contrast that has made these filled pastries a favorite among chocoholics around the world.

1. Bombolone: Bombolone is a traditional Italian doughnut, typically filled with custard, cream, or jam. It's a sweet indulgence, offering a delightful combination of soft, airy dough and rich filling. While not a health food, bomboloni can provide a quick source of energy due to their carbohydrate content. The sugar used in bombolone gives a rapid boost in energy levels, while the fat from frying adds richness and flavor. The fillings, like custard or jam, contribute to the overall taste and texture, making bomboloni a popular treat, especially when enjoyed fresh.

2. Nuts (hazelnuts): Hazelnuts are nutritious nuts that provide a wealth of health benefits. They are rich in healthy monounsaturated fats, which are beneficial for heart health and can help reduce bad cholesterol levels. Hazelnuts are also an excellent source of vitamin E, a powerful antioxidant that supports skin health and protects cells from oxidative damage. Additionally, they contain fiber, which aids in digestion and helps maintain a healthy weight. Hazelnuts are packed with essential minerals like magnesium, which supports muscle function, and copper, which is important for iron metabolism. Their rich, nutty flavor enhances both sweet and savory dishes.

For the Donuts:
  • Room temperature butter: 60g
  • All-purpose flour: 400g
  • Egg: 1
  • Egg yolk: 1
  • Room temperature milk: 180g
  • Dry yeast: 4g
  • Sugar: 80g
  • A pinch of cinnamon or vanilla (optional)

For Frosting:
  • Nutella (chocolate cream) or other types of cream, such as custard cream (custard cream recipe available here)
  • White chocolate
  • Colorful candy decorations
  • Nuts, such as chopped almonds or hazelnuts (optional)
Cách làm
  • Combine all the ingredients for the donuts in a bowl. Knead by hand (or with a mixer) for 15-20 minutes until the dough is soft and elastic, and no longer sticks to the sides of the bowl or the work surface.
    Small tip: If kneading by hand, it’s easier to do so on a flat surface like a countertop rather than in the bowl, which can be quite strenuous on your hands!
  • Shape the dough into balls. Cover tightly and let it rest for 1-2 hours, depending on room temperature, until the dough has doubled in size.
  • Place the shaped dough on a baking sheet lined with parchment paper and lightly dusted with flour to prevent sticking.
  • Allow the dough to rest for another 30-45 minutes.
  • Prepare a deep fryer or, ideally, a cast iron pot, which retains heat exceptionally well. Once the oil is hot, carefully fry the donuts, working quickly to avoid burning them.
  • Flatten the dough slightly and roll it out to a thickness of about 1-1.5 cm.
Shaping:
  • Prepare two round cutters of different sizes (or use cups or glasses). Cut the dough into ciambella shapes (donut rings). For bombolone, simply cut out larger round shapes without making a hole in the center.
  • Place the shaped dough on paper towels to absorb excess oil.
  • Allow to cool.
Filling with Chocolate:
  • Buy Nutella—a delicious chocolate-hazelnut cream. It’s widely available in supermarkets, especially in Vietnam.
  • Place Nutella in a piping bag.
  • Use a skewer or chopstick to make a hole in each donut. Pipe the Nutella into the donut.
Decoration:
  • Melt white chocolate in the microwave. I use a microwave at 600W, heating 200g of white chocolate in 30-second intervals. After each interval, stir with a spatula and continue heating in 30-second increments until the chocolate is fully melted.
  • I use this method because it’s quicker than melting over a Bain-Marie and reduces the risk of burning the chocolate. Be sure to melt slowly and use 600W instead of 900W.
  • Prepare a tray lined with parchment paper. Dip the ciambella or donut into the chocolate and place it on the tray.
  • Continue to sprinkle colorful sugar decorations on top.
  • Let the chocolate set, and you’re done!
