  While the modern Thanksgiving turkey tradition is relatively recent, the use of turkey as a food source dates back to indigenous peoples in North America long before the arrival of European settlers. Turkeys were domesticated by Native Americans and played a significant role in their diets and ceremonies, which started in 1947 when President Truman was presented with a live turkey by the National Turkey Federation. The tradition of officially pardoning a turkey and sparing it from becoming a Thanksgiving dinner became formalized during the Reagan administration in the 1980s. Since then, every U.S. president has continued the practice, with the turkey being sent to live out its days on a farm or sanctuary.

Spices: Spices for braising turkey typically include a blend of aromatic and flavorful spices such as thyme, rosemary, sage, paprika, garlic powder, and onion powder (I only use a few of these, but you can adjust however you want!). These spices add depth and complexity to the turkey, enhancing its natural flavor while providing additional health benefits. For example, rosemary and thyme have anti-inflammatory and antioxidant properties, while paprika adds a hint of sweetness and richness. These spices contribute to a well-seasoned, flavorful braise, helping to tenderize the turkey and infuse it with savory notes throughout the cooking process.

  • 2 large turkey thighs, scored to allow seasoning to penetrate
  • 1 large carrot, cut into bite-sized pieces
  • 1/2 fennel bulb, cut into bite-sized pieces
  • Approximately 100ml white wine
  • Unsalted butter
Seasoning:
  • 1 tablespoon crushed black peppercorns (use less if the pepper is very hot, as Vietnamese pepper is; Western pepper is less spicy, so more can be used)
  • 4 bay leaves
  • 1 tablespoon paprika
  • 1 large onion, cut into bite-sized pieces
  • 5 large garlic cloves, crushed
For the gravy sauce:
  • 3 tablespoons flour
  • Approximately 100ml water

  •  Add butter to the pot, then add the meat and fry until the skin is crispy. Use high heat; the meat doesn’t need to be cooked through, just crisp the skin.
  • Add the onions, garlic, and remaining spices, and sauté for 3 minutes until fragrant.
  • Add the fennel and carrot, and cook for 5 minutes.
  • Add the white wine and cook until the alcohol evaporates.
  • Add enough water to cover the ingredients.
  • Season with salt.
  • Cover the lid and simmer until the meat is tender, occasionally turning it to ensure even seasoning.
  • Once the meat is cooked, remove it from the pot.
  • Use a blender to puree the sauce.
  • Return the sauce to the pot and keep on low heat.
  • Mix the flour with water to make the gravy.
  • Gradually add 1/3 of the gravy mixture to the sauce, stirring continuously. Continue adding until the sauce reaches your desired thickness.
  • Serve hot with the gravy.
