VEGETARIAN COUS COUS

This dish is extremely fresh, packed of vitamin and fiber! I think it is best for summer!!!

Ingredients for the vegetable mix:
 
- Half an onion, diced
- 2 small carrots, diced
- 1 yellow bell pepper, diced
- 7 cherry tomatoes, diced
- 1/4 teaspoon ground cinnamon
- 1/3 teaspoon turmeric powder
- A pinch of Indian curry powder (preferably Indian curry powder because Vietnamese curry powder contains too much turmeric)
 
Ingredients for couscous:
 
- 250 grams of couscous
- 270 grams of water
- A few drops of fresh lime juice
- A few sprigs of cilantro or parsley
Cách làm
Couscous
  • Pour water over couscous, let it soak for about 10 minutes.
  •  Microwave at 900W for 10 minutes. 
  • Fluff with chopsticks to separate grains. Microwave for another 5 minutes.
 
Vegetable mix: 
  • Saute the diced onion until fragrant. 
  • Add all the vegetable ingredients and spices, except for the tomatoes. 
  • Cook until tender. 
  • Mix the vegetable mix into the couscous, season with salt to taste. 
  • Add a few drops of lime juice. 
  • Add fresh cherry tomatoes. 
  • Garnish with cilantro or parsley on top. This dish is delicious served warm or cold 😁
